Protein Paleo Pancakes

Since the beginning of all this Paleo-mania, and trying to Paleoize everything, I have been searching for a pancake recipe that could hold up to the flap jacks that my parents used to spike my insulin with before sending me off to school for the first eighteen years of my life. I have tried all of the “Paleotastic” ideas for recreating the morning treat, but none that I have tried have come close to tasting like Mom’s pre-diabetic morning prescription…until now!
I got this recipe from the Strength Sensi blog and I like three things about this recipe. For one, the pancakes taste great. Second, they are packed with protein and minimal net carbs. And third, they stay together nicely, not crumbling during the transfer from pan to plate. So if you are looking for a change in the morning from your standard go-to breakfast, or you would like to feed your tikes a healthier option, check these out. It is important to note that this is NOT a recommended daily breakfast. Be sure you don’t slide down the slippery slope back to bad habits! This is more of a “clean” cheat meal that you can make on a Sunday to satisfy your appetite for pancakes.
Ingredients
3 large eggs
1 scoop protein powder ( I used chocolate flavored)
1 tbsp coconut flour
1/2 tsp cinnamon
1/2 cardamom
a pinch of salt.
(I also included some pumpkin puree for some fall festive feel)
Directions
Blend all of the ingredients in a blender on high for 30 seconds. Melt some coconut oil in a pan. Cook like you would any other pancake. If you would like a few more after market options, you can always put some nut butter, or some of your favorite berries, on top. Enjoy!
