Mo’ Soup for You! Brittany’s Mom’s Homemade Chicken Soup

The recipe that my mom uses for chicken noodle soup has been around for years. It was originated by my great grandmother who then passed it down to my grandma. From my grandma, it was then passed off to my mom. Growing up in a family who owned a Italian restaurant, there were so many great recipes sent my way, this soup is at the top of the list. It’s easy to make and convenient for you to take when you are on the go. This soup is made from all natural ingredients which makes it very healthy. It’s warm comfortable food and the myth is that it fights off sickness. Anytime I feel myself coming down with a cold or am just feeling a little under the weather and congested, this soup always turns me right around and does the trick. I highly recommend you give a try!
Ingredients
1 chicken – 3-4 pounds whole or cut up
1 big bag of carrots – The real ones you peel
4 celery sticks
4 onions – cut into 4
Parmesan cheese
Pastina (Pasta – optional)
Beef boullions
Salt and Pepper
Directions
Begin by filling a soup pot with water. Place the whole chicken in the pot. Add onions, carrots, beef bouillons, salt and pepper. The secret touch is adding in a little parmesan cheese. Let this cook on low for 4.5 hours.
Once that is done, take everything out of the pot and strain the broth. Pick all of the meat off the chicken and place back in the soup with the carrots, celery, and onion. Add the cooked pastina (pasta) and finish off with a touch of parmesan cheese.
