The Easiest Way to Eat Healthy: The Instant Pot

Eating healthy seems so simple. We all know what we should be eating. We have all heard about, and maybe tried, all the different diets that are out there. But yet some of us still find ourselves in the same place we were at after making the decision to try to eat healthier, feeling as though we are not making progress or moving closer to our nutrition goal.
Often times, that this continual back and forth between comes down to two things: convenience and environment. If you are anything like a lot of people, you find yourself caught up in the day; making decisions, going from one thing to the next, thinking ahead about that call or meeting you have later, etc., etc. until it hits you…“I’m hungry! I should eat some food!”
Then while making your nutrition decision in this state you tend to eat what is most convenient and closest. This can be something healthy if you thought ahead and prepared for this occurrence, or it could be the burgers and fries at the fast-food joint across from work if you didn’t plan for this.
So if you know this happens on a somewhat regular basis, how can you combat it?
By making easy, healthy, and convenient food! And one of the best ways to do this is by getting yourself an Instant Pot. Seriously, these things are amazing. If you are unfamiliar, instant pots are pressure cookers that can make Crock Pot-size meals in 20-30 minutes.They are a lifesaver and they make prepping healthy food so easy.
You can add in your favorite protein, some veggies, a bit of broth, set the pressure to high for 10 minutes and let the instant pot work its magic. Boom! Twenty minutes later you have lunch and dinner prepared for the next three days. And there is no excuse to say you get bored with the same meals, a simple google search of ‘healthy instant pot meals’ will bring you more meal options that you could cook in your lifetime.
There is no excuse to not be able to meal prep with these things. They make it so dang easy and quick. Whenever people say they don’t have time to meal prep, the response is, “You should try an instant pot.”
Convenience is your best friend when it comes to eating healthy, and there is not any easier way – outside of hiring a personal chef – to make eating healthy any more convenient.

If you want your first recipe to try, here’s a favorite:
Instant Pot Chicken & Veggies
Ingredients
3 whole carrots
1 stalk of celery
1 yellow onion
3 Russet potatoes
2 chicken breasts
3 skinless, boneless chicken thighs
3 cups of chicken broth
3 sprigs of rosemary
Salt & pepper to taste
Directions
Chop 2 cups worth of carrots and celery. Slice one yellow onion. Cube three Russet potatoes. Place two chicken breasts and 3 skinless, boneless chicken thighs inside your instant pot. Season with salt and pepper as desired. Add 3 cups of chicken broth, chopped vegetables, and 3 sprigs of rosemary into the pot. Set the pressure to high for 8 minutes and then let the Instant Pot natural release for 10 minutes after cooking. Release steam from the pot. Remove, shred, and re-add the chicken. Enjoy!
