Go-To Breakfast Idea: Sweet Potato Hash

One of the biggest questions we get as coaches in regards to food is, “What do you do for breakfast?”. This can be a problem if you are putting your food into categories such as breakfast foods, lunch foods, and dinner foods. Categorizing your food in this manner is going to greatly limit what your options are for breakfast variety. If you can change this outlook, it makes your life a whole lot easier and fun – because steak in the morning is good, and bacon in the evening is even better!
One of my favorite go-to meals is a sweet potato hash recipe that I retrieved from Sarah Fragoso and her Everyday Paleo book. This meal is easy to prepare and delicious! It is also an example of using a “dinner” food (sweet potato) for breakfast. I normally double the recipe so that my son and I have breakfast prepared for the next couple of days. I hope you enjoy it as much as we do!
Sweet Potato Hash
1 lb ground pork sausage (or chicken sausage)
3 sweet potatoes, grated
3 tbsp coconut oil (I have also used coconut butter)
cinnamon
Brown the sausage in a large pot or pan. Add the coconut oil and shredded sweet potatoes to the cooked sausage; sometimes I’ll also add about 3 tbsp of organic butter as well. Stirring often, let the potatoes cook until they are soft, about 7 minutes. Add a TON of cinnamon and serve. Enjoy!
