Bison Burger and Poached Eggs Breakfast Delight!

Eating paleo can leave some of us with delicious, but seemingly limited breakfast options. I love breakfast; it’s probably my favorite meal of the day. Many Paleo eaters are happy with chicken and veggies, or even a piece of salmon in the morning. Not me, I want my breakfast to taste like breakfast. Of course there are some days when, as much as I love them, I don’t want to look at another egg scramble or frittata. I was having one of those days recently and was trying to think of a creative and simple breakfast solution. Simplicity is key in the morning; many of us don’t have the time or the brain power yet to create elaborate breakfasts. So using some of my delicious bison burgers I had made for dinner the night before, I came up with this very easy and very tasty breakfast option.
Ingredients:
2 Bison burger patties (I broil my burger patties with just a little bit of Montreal Steak Seasoning on each side.)
4 eggs
1-2 Avocados (I love my avocados so we each get one for breakfast, but ½ each works just fine as well)
1 cup cherry tomatoes sliced
2 small handfuls of Arugula
Salsa or hot sauce (optional)
Start off with a handful of arugula on each plate. Then top with the sliced cherry tomatoes, next add the sliced avocado. Next get your water ready for you eggs; I poach my eggs for 3 minutes. I like them runny and have found that to be the magic time, cook them for longer if you like the yolk hard. While your eggs are cooking just heat up your leftover bison patties, about a minute in the microwave should do it. Lay your patties on the arugula, tomatoes, and avocado. Once the eggs are cooked top each patty with two poached eggs. Top it all off with a little salsa or hot sauce if you like.
