Banana Bread Oatmeal Recipe

Oatmeal is a simple, convenient source of carbohydrates – but let’s be honest, it can get a bit monotonous day after day. This recipe takes a little more time and effort than your typical oats + water in the microwave for 2 minutes, but the end result is worth it. I have found that adding the ingredients into the oatmeal as it cooks gives the oats a more complex flavor and richer consistency.
Give it a try…but be warned, it will make it really hard to eat plain, bland microwaved oats ever again.
No more boring oats!
Note: You can double (or triple) the recipe and keep leftovers in the fridge.
INGREDIENTS
1 cup Old Fashioned Oats
1 cup Vanilla Rice Milk
1 cup Water
1 teaspoon Cinnamon
1 tablespoon Honey
1 Banana (ripe)
2 tablespoons Almond Butter
â…› teaspoon Sea Salt
1 cup Berries
METHOD
Combine rice milk, water, cinnamon and honey in a pot. Cover the pot, and bring liquids to a boil. Mash the ripe banana thoroughly with a fork. Once the liquid begins to boil, add in oats, mashed banana, almond butter, and sea salt. Reduce the heat, uncover the pot, and allow the oats to simmer in the liquid. It will typically take about 10 minutes for the oats to fully absorb the liquid. If I have time, I will even let the oats cook on the lowest heat setting for up to 20 minutes. A longer cook time will result in a smoother, creamier oatmeal while a shorter cook time will give the oats a chewier texture. Once the oats have reached the desired texture, remove from heat and let sit for 5-10 minutes. This cool-down time will give the oats a thicker, richer consistency. Top with berries…and enjoy!
